The recipe

  • 50 cloves garlic, peeled
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 onions, diced
  • 1 tbsp thyme chopped
  • 6 cups chicken broth
  • Handful herbs (bay leaf, parsley, thyme)
  • 3 cups diced stale bread
  • 1 cup sour cream

Preparing

Preheat oven to 180 degrees and then cut the top of the garlic cloves. Put them on aluminum foil and pour some olive oil on them to bake for 1 and half hour. Then let it cool off.

Now, heat 2 tbsp olive oil and butter on medium heat. Add the onions and cook 10 more minutes and after the garlic is baked, mash it with fork and put in this pot now. Add the broth and herbs after this.

Lower the heat, add bread and cook few more minutes until the stale bread softens. Blend and mix the soup and use a regular blender. Bring this mix back to heat and add the sour cream at last, with salt and pepper by taste preference.
