1. Spinach salad with garlic vinaigrette
For the preparation of this delicious salad you will need these ingredients:
- 2 minced garlic cloves
- 6 cups of baby spinach leaves or around 6 ounces
- ¼ cup sliced red onion
- 1/8 tsp salt
- ¼ tsp ground black pepper
- 1 ½ tbsp. extra virgin olive oil
- ½ tsp Dijon mustard
- 1 tbsp. white wine vinegar
Put all the ingredients mentioned above, except the baby spinach leaves and the red onion slices. Stir them using a whisk and then add the spinach leaves and the red onion slices. Toss to coat and enjoy this delicious salad.
2. Cucumber salad
To prepare this salad you will need these ingredients:
- 1 large English cucumber or two medium cucumbers
- 1 tsp stevia
- 2 tbsp. toasted sesame seeds
- 1/3 cup rice vinegar
- ¼ tsp salt
Wash the cucumbers first and peel them leaving alternating green stripes. After that, cut them in half lengthwise and then remove the seeds out using a spoon. You should cut them in very thin slices with the help of a food processor or knife. Put the cucumbers in a double layer of paper towel and squeeze out the excess moisture. Mix the vinegar, stevia and salt in one bowl and stir well. At the end, add the sesame seeds and the cucumbers and toss them well. Enjoy!
3. Cucumber and endive salad
For this salad you will need these ingredients:
- 90 g endives
- 200 g cucumbers
- 10 g black olives
- Olive oil
Wash the endives and clean them well. Wash and peel the cucumbers and cut them into circles. Mix these ingredients in a bowl and season with oil, salt and vinegar.
